Tropical fruit salad

 

Here's my fave fruit salad recipe. It's easy and you can substitute any fruit you have on hand - a great way to use up bits and pieces!

Ingredients

  • 1 medium ripe paw-paw
  • 1 small rockmelon
  • 1 small or ½ medium ripe pineapple
  • 2-3 firm bananas
  • 200 g punnet blueberries OR pulp of 3 passionfruit
  • 2-3 mint leaves, finely sliced
  • TO SERVE:
  • Thick vanilla yoghurt or reduced-fat ice cream

Nutrition per serve

One serve (including 1/4 cup of vanilla yoghurt) = 730 kJ (175 Cals), 2 g fat (includes 1 g saturated fat ), 30 g carbohydrate (includes 28 g sugars), 5 g fibre , 50 mg sodium. Read our nutrition rating system.

Directions

1. Cut paw-paw and rockmelon in half, remove seeds and skin, cut into large dice. Cut skin from pineapple, core and cut into large dice. Peel and cut bananas in thick slices.

2. Place prepared fruit in a large serving bowl, add blueberries or passionfruit pulp and toss gently to combine.

3. Cover and refrigerate until ready to serve. Serve topped with vanilla yoghurt or reduced-fat ice cream.
